New Birrieria Tijuana to open in Cheney

CHENEY – Sometime in early March of this year, Cheney will be home to a Birrieria Tijuana, a classic Mexican establishment, at 1204 1st St. This restaurant will be the tenth location for this Washington franchise, owned by founder Fredy Zavala.

Birrieria Tijuana began as a single operation in Kent Washington, according to Zavala, a little over four years ago. Zavala said he was just selling his food on the sidewalk.

"I started this brand with three of my best friends." Zavala said. "My goal is to treat our customers like more than just customers. We want them to have an authentic "Tijuana" experience." He continued.

"I must be doing something right." Zavala said. "I've been able to open ten locations in the past four years."

At time of publication, a specific date for the grand opening could not be established, however, Zavala gave a generalized time frame of sometime in the month of March.

"I am so happy they're coming to Cheney. Their food is phenomenal, and to have an authentic, traditional Mexican restaurant in town would be great." Errika Soto, a Cheney resident, said.
