Inferno Wings open for business

CHENEY- After almost two years of strictly delivery and pickup orders, Inferno Wings moved out of Bene's kitchen on May 1 and opened their own place to call home at 401 1st St.

"During COVID when we were only doing takeout, we were running Inferno Wings through the Bene's kitchen as a ghost restaurant," Operations Director Sabrina Anderson said. "It was still its own restaurant but it was only a night time kind of thing."

Inferno Wings had to take a back seat after the dine-in option became available again because Bene's needed all hands on deck again.

"People still were asking for it," Anderson said. "So then it was always the plan like 'maybe we'll get a spot for it' because it was really successful."

Derek Baziotis, owner and co-founder of Inferno Wings, bought the space in July 2021 and has been working on getting things together since.

Inferno Wings began as a way to create more work for people when things slowed due to the pandemic, but Baziotis and his team have made a lot happen for the eatery in less than two years.

"That really took off and now we're able to make it into something bigger," Anderson said. "The process has been a lot of trial and error through the transition."

Their menu and team have grown since the start of the operation during the winter of 2020, offering 11 different sauces, four styles of wings and garlic bread.

They've also increased staff from a two-person operation into a restaurant currently employing between 15-18 people.

"Our fresh homemade garlic bread that we do- people liked it during COVID and that still has been a hit right now," Anderson said.

Inferno Wings brought something new to Cheney.

"We definitely don't have a place that specializes in just wings here," Anderson said. "If people wanted just wings they have to drive into Spokane so we wanted to offer something that was a little bit different."

The new restaurant hosts a food challenge where customers can try the hottest sauce they've got.

"We have a challenge sauce called the inferno buffalo sauce and that one's super hot," Anderson said. "We do a 'We Dare You' challenge where you can just try one inferno wing-so far people can handle it and they love spice, and other people can't breathe so."

After three weeks of business, Anderson said Inferno Wings is finally getting into the "Cheney flow" of things and business has been good.
