Immix offers world class cuisine, but not world class price

For those who might be looking for a place to eat in Cheney that offers something other than fast food, pizza and Mexican food, the answer has arrived.
Immix Fusion is a table service restaurant opening is doors on Friday, July. 31, by offering an eclectic blend of French, Thai and Greek food along with sushi and steaks.
Executive chef and owner Mathew Irvin said Immix means to mix or fuse together different elements. In this case it means fusing items from different cuisines to make an original menu, which is what he thinks Cheney needs.
“I always wanted to do something like this,” Irvin said of his restaurant. “I knew there wasn't one like this one.”
Irvin is no rookie in the kitchen. He is a formally trained chef, and had a hand in founding Northern Lights Brewery in Spokane where he designed the kitchen and wrote the menu. His brother, Mark, is the owner.
Irvin has also worked at some of Spokane's premiere eateries, like Patsy Clark's, the Spokane Club and was the opening chef for Black Rock which is a private club in Rockford Bay in Coeur d' Alene. He has also worked at Waterfront Restaurant at the Priest Lake Resort.
Immix is in the former Pita Pit location at 102 College Ave. Irvin remodeled the establishment himself. He wrote the Immix menu specifically for the restaurant in Cheney. He said he wanted a dark, intimate ambience for his guests. He said he also will be serving beer and wine with the dinners.
For lunch, Irvin believes in keeping things simple. He said he is serving burgers, salad and a soup of the day. A lunch from Immix could be sesame seared ahi salad with sesame vinaigrette. He also has staple entrees like a Rueben sandwich on marble rye.
For dinner, guests can start with an appetizer like roasted Danish brie cheese served with roasted garlic and tomatoes balsamic reduction on toast points while they wait for entrees like Greek curry chicken, cedar plank salmon or Cajun black and blue prime rib.
Lunch prices vary from $7 to $10 and Dinner entrees vary in price from $9 to $18.
Lunch is served Monday through Friday from 11:30 a.m. to 2:30 p.m. Dinner is Monday through Saturday, from 4:30 to 9:30 p.m. For questions call 235-6001.
The restaurant is something Irvin thought would be a good match for the local residents.
“I saw something I could bring to Cheney that's not here,” Irvin said.
